During most of the year, supermarkets and stalls supply a wide variety of fruits and vegetables. During summer, you can get some of the most exotic fruits around. Ideally, five portions a day is thought to be beneficial for our long-term health. Fruits and vegetables contain a whole array of nutrients such as, vitamins, minerals, anti-oxidants and other components. Below are a few recipes to give you the perfect excuse for binging on fruit and veg this summer!

Apple Zinger (serves 1)

1 large apple
3 carrots
½ inch piece of ginger root
1 orange

1) Wash apple and cut into chunks.

2) Scrubs carrots, discard tops and cut carrots into chunks.

3) Cut skin from gingerroot and cut into smaller pieces.

4) Juice orange by hand or in electric citrus press.

5) Feed apple, carrots and gingerroot into juicer, then mix with freshly squeezed orange juice.

6) Serve and enjoy!

Fruit and Veg Salad
(Serves four)

1/3 cucumber
2 celery sticks
½ bag of spinach leaves
6 cherry tomatoes
6 black grapes
1 apple
1 carrot
1 papaya

1) Wash spinach leaves, remove stalks and chop leaves into slices.

2) Wash celery sticks a cut into small chunks.

3) Chop cucumber into small chunks.

4) Slice cherry tomatoes and grapes into halves.

5) Scrub carrot, discard tops and slice into small round pieces.

6) Cut papaya, remove seeds and cut into small chunks.

7) Wash and cut apple into small triangular pieces.

8) Mix all into bowl. Add pepper and crushed pecan nuts if desired and serve.
